Cheesy Mayo Stuffed Egg

A unique and creamy take on hard boiled eggs!

Ingredients:

  • 1 DOZEN, EGGS, HARD BOILED
  • 1/3 CUP, EDEN MAYO
  • 3 TBSP, PICKLE RELISH
  • 1 TBSP, ONION, MINCED
  • 2 TSP, MUSTARD
  • 1 TSP, SALT
  • 1/4 TSP, PEPPER
  • 1/4 TSP, PAPRIKA

Method:

Peel the eggs then cut in half, lengthwise. Scoop out the yolks into a bowl.

Trim the bottom of the egg whites to make each piece flat. Arrange the halves of egg whites on a tray. Set aside.

Use a fork to mash the egg yolks in the bowl. Add these ingredients a little at a time: cheesy mayo, pickle relish, minced onion, mustard, salt and pepper. Mix thoroughly and make sure the mixture is smooth.

With a spoon, scoop a bit of the egg yolk mixture into the halved egg white. Do the same with the rest.

If desired, sprinkle paprika on top and serve.

Ice Paints – Fun Activity for Kids!

Ice painting is such a great activity for kids, especially perfect for these warm summer months! And, the kids loved it!! The extra great thing about it is that it is super easy to make!

In small Dixie cups, add about 2 tablespoons or so of washable tempera paint and then add just enough water to fill the cup about halfway. Using the popsicle sticks, stir the water-paint mixture and then place the cups in the freezer. After freezing for about 30 minutes or so (so there was an icy layer forming on top), put the sticks in the paint. Then, let them freeze overnight.

Once you’re ready to paint, just tear the paper cup away and you’re good to go! The kids had so much fun with these!

It’s a bit of a messy activity (so you can just put down a cheap plastic tablecloth outside for quick clean-up). But, with the washable paints, the mess isn’t a big deal. The kids will love it, wanting to paint and paint! So, this is a great option for some creative summer fun!

Fine motor threading activity using straws and cardboard tubes

To do this activity you will need the following:  

  • Cardboard tubes
  • Straws (or similar)
  • Hole puncher
  • Scissors

Cut each of the cardboard tubes in half or about 10 – 15cm long. 

Depending on the capability of your child, ask them to punch holes into the cardboard tubes using the hole puncher.

Using a hole puncher is really great for fine motor development. It strengthens the smaller muscles in the fingers and palm of the hand. Important for when they are learning to write with a pencil or draw. 

Present them with the straws and ask them to thread them through the holes in the cardboard tube. In one side and out the other. They begin to look a little like crazy and colorful spiders after awhile. 

This activity does open itself up to challenging your child and their problem solving skills.
