Cheesy Mayo Stuffed Egg

A unique and creamy take on hard boiled eggs!

Ingredients:

  • 1 DOZEN, EGGS, HARD BOILED
  • 1/3 CUP, EDEN MAYO
  • 3 TBSP, PICKLE RELISH
  • 1 TBSP, ONION, MINCED
  • 2 TSP, MUSTARD
  • 1 TSP, SALT
  • 1/4 TSP, PEPPER
  • 1/4 TSP, PAPRIKA

Method:

Peel the eggs then cut in half, lengthwise. Scoop out the yolks into a bowl.

Trim the bottom of the egg whites to make each piece flat. Arrange the halves of egg whites on a tray. Set aside.

Use a fork to mash the egg yolks in the bowl. Add these ingredients a little at a time: cheesy mayo, pickle relish, minced onion, mustard, salt and pepper. Mix thoroughly and make sure the mixture is smooth.

With a spoon, scoop a bit of the egg yolk mixture into the halved egg white. Do the same with the rest.

If desired, sprinkle paprika on top and serve.
